Gently Glazed Honey–Lime Chicken on Avocado Rice

Ingredients

For the Honey–Lime Chicken
2 boneless, skinless chicken breasts (approx. 450g)
60ml runny honey
2 tbsp freshly squeezed lime juice
1 tsp finely grated lime zest
2 garlic cloves, finely minced
A pinch of sea salt and freshly cracked black pepper
1 tbsp neutral oil, for cooking

For the Fragrant Rice
250g cooked white or brown rice, still warm
A small handful of fresh coriander, finely chopped
1 tbsp lime juice
A light seasoning of sea salt

For the Avocado Layer
2 perfectly ripe avocados, gently sliced
1 tbsp lime juice
A touch of sea salt and freshly cracked black pepper

Method

Prepare the Honey–Lime Chicken
Season the chicken breasts with a light scattering of sea salt and freshly cracked black pepper. In a small bowl, whisk together the honey, lime juice, zest, and minced garlic until smooth and fragrant. Heat a wide skillet over a medium-high flame and add a drizzle of oil. Sear the chicken for 6–7 minutes on each side until beautifully golden and cooked through. In the final moments, brush generously with the honey–lime glaze, allowing it to gently caramelise into a glossy finish. Remove from the heat and leave to rest for a few minutes before slicing with care.

Prepare the Fragrant Rice
In a bowl, fold the warm rice with freshly chopped coriander and a squeeze of lime juice. Season lightly with salt and mix until evenly perfumed. Allow it to cool just slightly, so it holds its shape when composed.

Prepare the Avocado
Slice the avocados into soft, even segments and dress with lime juice, a pinch of salt, and a touch of black pepper. Handle gently to preserve their silky texture and vibrant colour.

Compose the Stack
Place a ring mould onto each serving plate and press the rice neatly into the base, creating a firm, even layer. Arrange the avocado slices above, overlapping them delicately for a refined finish. Top with the sliced honey–lime chicken, fanned elegantly across the surface. Lift the mould carefully to reveal the layered form, and finish with a light drizzle of any remaining glaze around the plate for a subtle, polished flourish.
